The BEST Potato Recipe Ever

We had a great time celebrating my Mum’s 60th Birthday on Friday night; we had beautiful flowers from my favourite florist Hacienda on Racecourse Road, a beautiful rich and airy chocolate cake from Chocolate and Flour at Morningside and I thought it only fitting to debut the beautiful beeswax birthday candles from Herriott Grace that I had been squirrelling away to use for a special occasion….. However, with all of this beauty the real show stopper of the night was ….. the mashed potatoes. I know, not glamourous at all! You must at some point try this recipe, I urge you, perfect for the rainy weather we are having. I woke up Saturday morning still thinking about them! The recipe is from Riverford (a favourite in our house), try it!

Serves 4-6

Ingredients

  • 1kg floury potatoes, peeled and quartered
  • 4 garlic cloves, peeled
  • 100g unsalted butter
  • 100ml double cream
  • 2 teaspoons Dijon mustard
  • 2 teaspoons wholegrain mustard
  • sea salt and freshly ground black pepper.
Cover the potatoes and garlic with water and bring to the boil. Simmer for about 20 minutes. In another pan, heat the butter and cream with the mustards.
Drain the potatoes. Place a potato ricer * over the butter mixture and use it to sieve the hot potatoes directly on to the hot mix. Beat well and season. Seriously fantastic!!
* Potato Ricers are a really useful kitchen tool, they seive and also add airy.
