Easter Hot Cross Bun Mug Cake

I swear every Easter I get all excited about hot cross buns and then I forget about them and they go rock hard in the pantry .

If you’re like me, then this recipe is for you. It’s super simple, super fast and only needs a handful of ingredients, all of which I bet you have in your pantry.

It’s the perfect thing to make for the Easter long weekend, when you want to make a cake, but perhaps don’t really want to make a cake and would rather sit on the sofa and nestle in.

You make the pudding in a mug and it takes only minutes.

The mug pudding is very much like a bread and butter pudding. If you don’t have a microwave this also works in the oven, just place a piece of alfoil on top of your mug to stop the hot cross bun ‘lid’ burning for 10 minutes on 180C or 375F.

I know, I know – I was just talking about my wellness routine the other week, so me sharing a decadent chocolate pudding isn’t lost on me, but, it’s ok to have some indulgences you know :)

I was really hoping Edie was going to join me while making these, but her back teeth are coming through and she was feeling off. Being 2 is hard.
